Last night I brought out my pressure cooker. I do like that thing. It's an electric one, not the type that you use on the stove top. Its a lot like the crock pot, only instead of hours of cooking, often the cooking time is measured in minutes. Using the pressure cooker is the only way I know of that you can decide at the last minute that you want a rack of ribs. You can get tender fall off the bone ribs in less than an hour with this machine. I haven't done a lot with this thing since getting it a year ago though. I do always use it for mac and cheese. I love this recipe. It puts all of the pre-made stuff to shame. You can switch the pasta to whole wheat, use low fat cream cheese, and low fat cheese to make a decent meal. Its awesome. I need to start experimenting with more recipes.

In 7 minutes, everything was cooked, and ready to be served. 7 minutes!!!

I took last nights pork, chopped it a bit, and added bbq sauce for sandwiches.

BBQ'd pork sandwiches and Mac n Cheese!

Part of my reasons for talking about this, aside from the fact that I love cooking, is I need to drastically improve my photos. I don't have a lot of time though to take pictures of the food while I am cooking. Often I have a 4 year old and a 31 year old hollerin at me "is it ready?" "is it done yet?" "can we eat yet?" So I have to be quick with the pictures. Still its not really a good excuse for bad photos. So I am working on it.

  2. Yummy, home-made mac and cheese in 7 minutes? I need to get me one of those pressure cooker things! :-)

I know what you mean about taking the pics. When my hubby is out of town and I'm trying to get dinner on the table for my two little ones AND take pictures for the blog, it gets kind of hairy. They usually end up munching on the veggies or fruit that I am serving alongside the meal - at least they're eating the healthiest part first! We'll work on manners later...
